Taco Salad

Ingredients

Turkey (10 servings)

  • 60 oz ground turkey (85/15)
  • 1 tablespoon olive oil
  • 2x recipe taco seasoning + habanero salt, other spices
  • Apple cider vinegar
  • 1 yellow onion, diced
  • 1 jalapeno, diced, seeded

Salad (1 Serving)

  • 28g Fritos (original or jalapeno)
  • 14g sharp cheddar
  • 30g Bolthouse ranch or jalapeno ranch
  • 20g corn
  • Salsa
  • Sour cream
  • Romaine lettuce
  • Spinach
  • Pickled jalapenos
  • Cherry tomatoes
  • Cucumbers
  • Red onion
  • Bell peppers
  • Lime, juiced
  • Hot sauce (Cholula, etc)

Directions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the onions, cook a few minutes until translucent.
  3. Add the taco seasoning and jalapeno.
  4. Add the ground turkey, cook it through.
  5. Add apple cider vinegar (just need some liquid, doesn't need to be measured).
  6. Reduce heat to low, add apple cider vinegar, simmer for 30+ minutes.
