Meatballs and Sauce

Meatball Ingredients

Note: Makes 20-24 meatballs. Regular serving: 2, very large serving: 3

  • 2 pounds ground turkey (or beef)
  • 1 pound ground Italian sausage
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 3/4 teaspoon dried red pepper flakes
  • 1 cup 2% milk
  • 1/4 cup Worcestershire sauce
  • 5 dashes hot sauce
  • 1 cup parmesan cheese, grated
  • 1.5 cups bread crumbs
  • 2 eggs
  • 1.5 onion, diced
  • as much garlic as you can stand, minced
  • 1 tablespoon olive oil
  • Dash of salt

Sauce Ingredients

Note: Makes enough sauce for 10-12 meatballs.

  • 2 or 3 cans diced or crushed tomatoes (14.5 oz each)
  • 1 can tomato sauce (14.5 oz)
  • 1 can tomato paste (6 oz)
  • 1 carrot, sliced
  • dried oregano
  • basil

Directions

  1. Preheat oven to 400.
  2. Chop the onions, mince the garlic.
  3. Heat the olive oil in a large sauce pan on medium-high heat.
  4. Cook the onions and garlic in oil until the onions are clear.
  5. Remove the pan with the onions and garlic from heat. Transfer half into a large bowl where we make-a da meatballs. Keep the rest in the pan.
  6. Add the remainder of the meatball ingredients to the bowl with half of the onions and garlic.
  7. Mix all the meatball ingredients by hand. Shape into 1.5 inch diameter balls, place onto baking sheets.
  8. Bake for 20-25 minutes, rotating baking trays halfway through.
  9. Add the canned tomatoes, tomato sauce, and tomato paste to the sauce pan with the already cooked onions and garlic. Heat on low, stirring occasionally.
  10. Take the meatballs out of the oven. Add them to the tomatoes.
  11. Continue to heat on low for 15 minutes or longer (up to 90 minutes).

Notes

  • Hunt's Crushed Basil, Garlic, & Oregano are my fav.
  • Using disposable gloves when making the meatballs is recommended.
