Meatballs and Sauce
Meatball Ingredients
Note: Makes 20-24 meatballs. Regular serving: 2, very large serving: 3
- 2 pounds ground turkey (or beef)
- 1 pound ground Italian sausage
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 3/4 teaspoon dried red pepper flakes
- 1 cup 2% milk
- 1/4 cup Worcestershire sauce
- 5 dashes hot sauce
- 1 cup parmesan cheese, grated
- 1.5 cups bread crumbs
- 2 eggs
- 1.5 onion, diced
- as much garlic as you can stand, minced
- 1 tablespoon olive oil
- Dash of salt
Sauce Ingredients
Note: Makes enough sauce for 10-12 meatballs.
- 2 or 3 cans diced or crushed tomatoes (14.5 oz each)
- 1 can tomato sauce (14.5 oz)
- 1 can tomato paste (6 oz)
- 1 carrot, sliced
- dried oregano
- basil
Directions
- Preheat oven to 400.
- Chop the onions, mince the garlic.
- Heat the olive oil in a large sauce pan on medium-high heat.
- Cook the onions and garlic in oil until the onions are clear.
- Remove the pan with the onions and garlic from heat. Transfer half into a large bowl where we make-a da meatballs. Keep the rest in the pan.
- Add the remainder of the meatball ingredients to the bowl with half of the onions and garlic.
- Mix all the meatball ingredients by hand. Shape into 1.5 inch diameter balls, place onto baking sheets.
- Bake for 20-25 minutes, rotating baking trays halfway through.
- Add the canned tomatoes, tomato sauce, and tomato paste to the sauce pan with the already cooked onions and garlic. Heat on low, stirring occasionally.
- Take the meatballs out of the oven. Add them to the tomatoes.
- Continue to heat on low for 15 minutes or longer (up to 90 minutes).

Notes
- Hunt's Crushed Basil, Garlic, & Oregano are my fav.
- Using disposable gloves when making the meatballs is recommended.
