Grilled Zhug Chicken Salad
aka Imitation Roti Salad
Ingredients
Chicken
- 2 lb boneless skinless chicken breasts
- 1.5 lb boneless skinless chicken thighs
- Stonehouse Zhug Seasoning
- 4+ tablespoons olive oil
Couscous
- 1 cup large couscous
- Better than boullioun chicken base
Salad
- Spinach or 50/50 greens
- Red cabbage
- Tomatoes
- Cucumbers
- Carrots (sometimes)
- Mint (sometimes)
- Pickled Onions
- Feta cheese
- Lemon, juiced
- Easy dressing: Bolthouse Cucumber Ranch
- Dill pickles
- Pepperoncinis (sometimes)
- Fresh dill
- Salt & Pepper
Directions
- Preheat grill to medium.
- Season the chicken with Zhug (dry season).
- Brush the grill grates with olive oil.
- Grill 5 minutes on 1 side.
- Move the chicken, rebrush the grates with olive oil, flip the chicken, cook for another 4 minutes.
- Cook until chicken reaches 165. Thighs should be done by now, breasts may take more time (check every 3-4 minutes, flipping and adding more oil if needed).
