Grilled Zhug Chicken Salad

Ingredients

Chicken

  • 2 lb boneless skinless chicken breasts
  • 1.5 lb boneless skinless chicken thighs
  • Stonehouse Zhug Seasoning
  • 4+ tablespoons olive oil

Couscous

  • 1 cup large couscous
  • Better than boullioun chicken base

Salad

  • Spinach or 50/50 greens
  • Red cabbage
  • Tomatoes
  • Cucumbers
  • Carrots (sometimes)
  • Mint (sometimes)
  • Pickled Onions
  • Feta cheese
  • Lemon, juiced
  • Easy dressing: Bolthouse Cucumber Ranch
  • Dill pickles
  • Pepperoncinis (sometimes)
  • Fresh dill
  • Salt & Pepper

Directions

  1. Preheat grill to medium.
  2. Season the chicken with Zhug (dry season).
  3. Brush the grill grates with olive oil.
  4. Grill 5 minutes on 1 side.
  5. Move the chicken, rebrush the grates with olive oil, flip the chicken, cook for another 4 minutes.
  6. Cook until chicken reaches 165. Thighs should be done by now, breasts may take more time (check every 3-4 minutes, flipping and adding more oil if needed).
