Grilled Peanut (& Ginger & Soy) Chicken Salad
Ingredients
Chicken (10 servings)
- 3.5 lb boneless skinless chicken thighs
- 1/2 cup creamy peanut butter
- 1/2 cup premium dark soy sauce
- 1 lime, juiced
- 1 tablespoon garlic chili paste
- 2 tablespoons rice wine vinegar
- 2 tablespoons ginger, minced
- 6 garlic cloves, minced
- 1/2 tablespoon sesame oil
- Kosher salt
- 3+ tablespoons peanut oil
- Scallions, chopped
- Sesame seeds
Salad (1 serving)
- Green and/or red cabbage
- Spinach (Christina prefers this to cabbage)
- 7g unsalted peanuts, crushed
- 10g La Choy chow mein noodles
- Carrots
- Cilantro
- Bell peppers (any color except green)
- Snap peas
- Scallions
- Broccoli
- 1/4 to 1/2 lime, juiced
- Sesame seeds
- Sriracha to taste
- 30g Trader Joe's Spicy Asian Peanut Vinaigrette
Directions
- Combine the peanut butter, soy sauce, lime juice, garlic chili paste, rice wine vinegar, sesame oil, ginger, and garlic.
- Add the chicken and marinade for at least 1 hour.
- Preheat grill to medium.
- Season the chicken with kosher salt just before grilling.
- Brush the grill grates with peanut oil.
- Grill 5 minutes on 1 side.
- Move the chicken, rebrush the grates with peanut oil, flip the chicken, cook for another 4 minutes.
- Cook until chicken reaches 165. Thighs should be done by now, breasts may take more time (check every 3-4 minutes, flipping and adding more oil if needed).
- Garnish with chopped scallions and sesame seeds.

Notes
- This recipe can be made with a mix of chicken breasts & thighs like other similar grilled chicken + salad recipes. But this one in particular is better with only thighs.
- For a vegetarian version, use portobello mushrooms instead of chicken. Marinade them the same way, but grill at a slightly lower temperature for a few minutes longer.
- Olive oil can be used for the grill instead of peanut oil.
