French Onion Soup
Ingredients (10 servings)
- 6-8 yellow onions, sliced
- 6 garlic cloves, chopped
- 1 cup butter (1 full stick)
- 3 bay leaves
- 3 sprigs fresh thyme
- 1.5 cups wine (any type)
- 3 tablespoons flour
- 10 cups beef broth
Directions
Cooking
- Slice the onions, chop the garlic.
- Preheat multiple pans on medium heat. Add the butter and melt it, dividing the butter even between the pans. More pans means more surface area for cooking the onions, I use 3: skillet, soup pot, dutch oven.
- Add the onions, garlic, bay leaves, and thyme to the pans, season with salt and pepper. Cook the onions until they are very soft, 25-30 minutes, stirring them every 3-5 minutes.
- Combine the onions into a single pan (soup pot), remove the thyme and bay leaves.
- Add the wine, bring to a boil, simmer 5-10 minutes until the wine has evaporated.
- Reduce heat to medium-low, dust the onions with flour, stir and cook for another 5-10 minutes, until the onions are pretty thick.
- Add the beef broth, cook on low for 10 minutes or longer.
Serving
- Toast bread slices (baguette, sourdough, etc with cheese (provolone, etc) on top until the cheese is melted.
- Serve the soup with toasted bread & cheese on the top.
Notes
- Usually use Riesling or another white wine, but any type of wine works.
- Based on a few recipes such as this one.
- Serve with a protein!
