Oven Roasted Plantains

Ingredients

  • 1 Plantain
  • 0.5 tablespoons coconut oil
  • Kosher salt

Directions

  1. Preheat oven to 400 F.
  2. Peel the plantain: slice both ends off, then make a shallow cut along the side, then remove the peel.
  3. Slice into around 0.5 inch pieces. 1 plantain will be 9-12 slices.
  4. Toss the plantains in the coconut oil and arrange them on a baking sheet with a wire rack.
  5. Bake for 20 minutes.
  6. Move each slice onto a cutting board. Using a measuring cup, smash each slice down.
  7. Put them back on the baking sheet and bake for another 15 minutes.
  8. Sprinkle with kosher salt and serve.

Notes

  • For tostones, use unripe green plantains.
  • If the plantains are more yellow and ripened, switch to a maduros style recipe instead: omit the salt and don't smash them down after 20 minutes. Either way it's good!
