Oven Roasted Plantains
Ingredients
- 1 Plantain
- 0.5 tablespoons coconut oil
- Kosher salt
Directions
- Preheat oven to 400 F.
- Peel the plantain: slice both ends off, then make a shallow cut along the side, then remove the peel.
- Slice into around 0.5 inch pieces. 1 plantain will be 9-12 slices.
- Toss the plantains in the coconut oil and arrange them on a baking sheet with a wire rack.
- Bake for 20 minutes.
- Move each slice onto a cutting board. Using a measuring cup, smash each slice down.
- Put them back on the baking sheet and bake for another 15 minutes.
- Sprinkle with kosher salt and serve.
Notes
- For tostones, use unripe green plantains.
- If the plantains are more yellow and ripened, switch to a maduros style recipe instead: omit the salt and don't smash them down after 20 minutes. Either way it's good!
