Instant Pot Spanish Rice

Ingredients

  • 3 tablespoons olive oil
  • 1/2 diced onion
  • 2 cups long white rice
  • 1 tablespoon chopped garlic
  • 1 3/4 cups of broth
  • 1 cup salsa
  • 1 cup tomato sauce
  • 2 tablespoons Goya salad olive and peppers (strain liquid first as its too salty)

Instructions

  1. Heat olive oil in Instant Pot on Saute.
  2. Add onions and cook until translucent.
  3. Add rice and frequently stir until lightly browned.
  4. Add garlic and stir.
  5. Turn off Instant Pot, remove inner pot and place it onto a trivet or pot holder surface. (This is important because otherwise the bottom rice will burn when pressure cooking later on).
  6. Add the 3 3/4 cups of liquid ingredients (broth, salsa, and tomato sauce).
  7. Stir until combined.
  8. Place inner pot back into Instant Pot frame, lock lid, and hit Rice button (auto / 12 min low).
  9. Pressure cook and then release steam when complete (Instant pot takes about 20-30 minutes to get up to pressure, then another 12 min to cook).

Notes

  • First attempt: 1:1 ratio of liquid to rice, it burned, not enough liquid.
  • Second attempt: 4.5 cups of liquid, a little too liquidy.
  • Third attempt: 3 3/4 cups of liquid and 2 cups of rice, just right.
