Cole Slaw

Ingredients

  • 1/2 head of green cabbage, finely sliced
  • 1/2 head of iceberg cabbage, finely sliced
  • 1 carrot, grated
  • 1/2 red onion, finely sliced

Dressing

  • 1/3 cup apple cider vinegar
  • 2 tbsp mayonnaise
  • 3 tbsp olive oil
  • 1/2 tbsp honey
  • 1/2 tbsp mustard (any "fancy" type: dijon, stone ground, whole grain, etc)
  • 1 tsp celery seed
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Chop 1 head of cabbage into quarters. Slice 2 of the quarters into thin strips, add them to a large bowl.
  • Chop 1 head of iceberg lettuce into quarters. Slice 2 of the quarters into thin strips, add them to the same bowl.
  • Grate the carrot into the bowl.
  • Finely slice the onion, add to the bowl.
  • In a separate smaller bowl, whisk together the apple cider vinegar, mayonnaise, mustard, honey, olive oil, celery seed, salt and pepper to create the dressing.
  • Add the dressing to the cabbage, lettuce, onions and carrots, stir to combine.
