Cole Slaw
Ingredients
- 1/2 head of green cabbage, finely sliced
- 1/2 head of iceberg cabbage, finely sliced
- 1 carrot, grated
- 1/2 red onion, finely sliced
Dressing
- 1/3 cup apple cider vinegar
- 2 tbsp mayonnaise
- 3 tbsp olive oil
- 1/2 tbsp honey
- 1/2 tbsp mustard (any "fancy" type: dijon, stone ground, whole grain, etc)
- 1 tsp celery seed
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop 1 head of cabbage into quarters. Slice 2 of the quarters into thin strips, add them to a large bowl.
- Chop 1 head of iceberg lettuce into quarters. Slice 2 of the quarters into thin strips, add them to the same bowl.
- Grate the carrot into the bowl.
- Finely slice the onion, add to the bowl.
- In a separate smaller bowl, whisk together the apple cider vinegar, mayonnaise, mustard, honey, olive oil, celery seed, salt and pepper to create the dressing.
- Add the dressing to the cabbage, lettuce, onions and carrots, stir to combine.
