These are legit pancakes, much better than they sound or should be.
Ingredients
- 2 eggs
- 80-100g (1/2 cup) cottage cheese
- 60g-70g (1/2 cup) oats
- 1 teaspoon baking powder
- 1 pinch of kosher salt
- 1 teaspoon Vanilla extract
- Cinnamon, nutmeg (optional)
- 16-20g butter (4-5g per pancake)
Directions
- Add the oats to a blender, blend into flour/powder consistency.
- Add the rest of the ingredients except butter to the blender, then blend together.
- Heat a skillet on medium.
- For each pancake, drop a slice of butter in the pan, then scoop the batter onto the melted butter (3 tablespoons, or 1/4 measuring cup).
- Cook it for a little (3-3.5 minutes), flip it, cook it a little more (1-1.5 minutes), done.

- 30g maple syrup = 108 calories (enough for 2 pancakes)
