Oat Cottage Cheese Pancakes

These are legit pancakes, much better than they sound or should be.

Ingredients

  • 2 eggs
  • 80-100g (1/2 cup) cottage cheese
  • 60g-70g (1/2 cup) oats
  • 1 teaspoon baking powder
  • 1 pinch of kosher salt
  • 1 teaspoon Vanilla extract
  • Cinnamon, nutmeg (optional)
  • 16-20g butter (4-5g per pancake)

Directions

  1. Add the oats to a blender, blend into flour/powder consistency.
  2. Add the rest of the ingredients except butter to the blender, then blend together.
  3. Heat a skillet on medium.
  4. For each pancake, drop a slice of butter in the pan, then scoop the batter onto the melted butter (3 tablespoons, or 1/4 measuring cup).
  5. Cook it for a little (3-3.5 minutes), flip it, cook it a little more (1-1.5 minutes), done.

  • 30g maple syrup = 108 calories (enough for 2 pancakes)
